化学成分

白术主要含挥发油。挥发油中主要成分为苍术酮（atractylon），含量占27.4%～61%；其次为白术内酯A（butenolide A）和白术内酯B（butenolide B）；还含有苍术醚（atractylon）、杜松脑（iunipeream-phor）、苍术内酯Ⅰ～Ⅳ（atractylohdeⅠ～Ⅳ）、羟基苍术内酯（hydroxyactyldide）、倍半萜烯酮（sesquiterpenelon）、β-桉醇（β-eudesmol）、茅苍术醇（hinesol）、多糖、甾醇、棕榈酸、果糖、菊糖、多种氨基酸等。
