◎Zhuaimian Noodle
Zhuaimian noodle is an authentic wheaten food in Wu'an and a local common meal. Generally, cool water is used to make the noodles and the noodles are pounded repeatedly with hands with salt water. The dough should be soft, otherwise it would be easy to be pulled off. After that, the dough is left in the basin to brine.(https://www.daowen.com)
Vegetable brine: put various vegetables, such as potato, tomato, yam, eggplant, green pepper, cabbage, etc. into a pot,stir-fry them in the pot, then add fried meat slices or eggs, add water and boil them to make vegetable brine. Deep-fried sauce marinade: dice the pork and stir-fry it with onion and ginger, dice the cauliflower, fungus and other ingredients, then deep-fry the sauce, add the prepared ingredients, add a little stock, and simmer for a moment to make deep-fried sauce marinade. When pulling noodles, roll out the dough in the basin into pancakes (about 3mm thick),cut it into long strips about 2cm wide, pinch the ends of the strip with both hands, and stretch and yank to both sides. Because the noodles are salted, they are very tough and chewy, generally they will not be yanked off. Once a strip is pulled thin and long,it will be put into a pot of boiling water. Then you can go with another one. Then, they are put into a bowl with chopsticks and poured with a spoonful of marinade and seasoned with sesame salt or sesame sauce, bean curd soup, chives and so on. This kind of noodles are slightly wider and thicker than ordinary noodles, and taste al dente.
