Steven(S): George,can you do me a favor?

George(G): Of course,Steven.

S: Help me to peel all of these tomatoes as soon as possible.

G: All of them?

S: Yes,all of them.

G: But how should I do?

S: Listen,firstly,cut an X into the bottom of the tomato,and be sure not too deep.

G: OK,and then?

S: After that,drop it into boiling water for about 10 to 15 seconds.

G: 10 to 15 seconds,okay.

S:Then,take it out of boiling water and plunge(投入) it into ice water.See,it is easy to use a paring knife to peel it now.

G: I see.I’ll do my best.

S: Thank you very much.

G: You are most welcome.

Vegetable chef(V): Wash the cucumbers,tomatoes,onions and lettuce well.

C: OK.The cucumbers are always dirty.

V: Soak it in salt water.

C: For how long?

V: For about 20 minutes.

C: And what shall I do then?

V: Cut the cucumbers into pieces,dice the tomatoes and onions.

C: How shall I cook the cucumbers?

V: For vegetable salad.

SMOKED EEL WITH FRENCH BEAN SALADAND CARROT PUREE

— A dish of beautiful textures: silky,fresh and soft

Ingredients(serves 4):

4×25g smoked eel fillet,without skin

For the French bean salad:

100g French beans,blanched and sliced

20g shallots,chopped

20ml white wine vinegar

2g Dijon mustard

20ml extra virgin olive oil

For the carrot puree:

100ml carrot juice

100g confit carrots(see basics)

20ml extra virgin olive oil

Direction:

Combine the mustard and vinegar in a mixing bowl.Emulsify with olive oil.Add the chopped shallots and beans then season to taste.

To make the carrot puree,pour the carrot juice into a saucepan and reduce by half.

Blend the carrot juice and confit carrot.Pass through a sieve and finish with olive oil.

Season to taste.

Garnish with horseradish cream,caviar and a sprig of chervil.
