In such a society pursuing the individualism and fashion, western food once considered niche products are gradually towards the mainstream, and has become an important part of star hotels and social dieting.

In order to meet the development of food industry and western food innovation in Liao Ning Province, Liaoning Restaurant And Catering Association established Liaoning Western-style Food Professional Committee in 2015 and set the goal to publish a book about western food cooking as its priority. Western Food Classroom finally is released. This book combines the goal of being both practical and professional, focusing on introducing the popular and classic western dishes in the star-hotels and social dieting in Liao Ning Province, which keeps some of the traditional characteristic of western dishes and at the same time meet the fashionable tendency of modern dieting development. It will enable us not only to appreciate the western food culture but also taste the delicious food in Liao Ning Province.

With the many years’ working experience of 98 western food chefs, this book is going to present us one of the important characteristic of western dishes that appears to be delicate processing, a variety of dishes and taste. It could be regarded as the classic work establishing the culture of western food cooking in Liao Ning Province. With the coming of economic globalization and Internet+, Western and Chinese dieting will mix and take advantage with each other. People will enjoy the more delicious, convenient and nutritious western food. Meanwhile we also hope that this book will contribute to the development of food industry in the era of venturing and innovating.
