布朗沙司 Brown Sauce

材料牛骨1.5千克,番茄膏30毫升,洋葱100克,胡萝卜(粗切)150克,大蒜(粗切)80克,西芹(粗切) 100克,胡椒粒8粒。

制作方法

1 牛骨、洋葱、胡萝卜、大蒜、西芹置于烤盘上,放入220℃的烤箱内烤上色。

2 将烤好的牛骨倒入锅中。

3 加入番茄膏略炒。

4 加入适量面粉拌匀。

5 倒入3升清水煮制,一般需煮制8小时以上。

6 滤出清汤,再从汤渣压出水分,待凉即可。

Ingredients

Beef bone 1.5kg

Tomato paste 30ml

Onion 100g

Carrot, roughly chopped 150g

Garlic, roughly chopped 80g

Celery, roughly chopped 10g

Peppercorn 8pcs

Procedures

1 Place beef bone, onion, carrot, garlic and celery on the baked tray at 220℃ until it turns colored.

2 Put the baked beef bone into the pan.

3 Sauté slightly with the tomato paste.

4 Stir evenly with suitable flour.

5 Steam with 3L water for more than 8 hours.

6 Strain the stock, press the solid with ladle to extract extra liquid and let cool.
