巧克力慕斯 Chocolate Mousse

材料 糖230克,牛奶380克,蛋黄300克,巧克力600克,鱼胶40克,淡奶油900克。

制作方法

1 先用融化的巧克力制成巧克力圆片备用。

2 将煮开的牛奶倒入混合的蛋黄和糖中。

3 回火煮到85℃,再加入融化的巧克力,降温到60℃。

4 加入泡好的鱼胶片。

5 降温到40℃,加入打发的淡奶油,倒入裱花袋中冷却。

6 装盘,将做好的巧克力慕斯挤在巧克力圆片中即可。

Milk 380g

Egg yolk 300g

Chocolate 600g

Fish gelatin 40g

Unsalted butter 900g

Procedures

1 Make chocolate chips with melted chocolate to set aside.

2 Boil the milk , put into a mixture of egg yolk and sugar.

3 Heat to 85℃, add melted chocolate, and then cool to 60℃.

4 Add soaked fish gelatin.

5 Cool to 40℃, add to foamed unsalted butter and put into the decorating bag to cool.

6 Dish up, squeeze the mousse onto the chocolate chips.
